    My girlfriend and I visited Published just this past week and want to extend our sincere appreciation for how warmly we were welcomed at the restaurant and for how the chef and the service team went above and beyond to make our experience unforgettable.

    We’ve been in BC on vacation for a couple of weeks, and this dinner was absolutely the highlight of our trip. Our server informed us that the chef was looking forward to our visit as we’d mentioned in our booking that we’d never been to a Michelin-star restaurant before.

    We ordered a couple of amuse-bouches and were instead surprised with six different pairs so we could experience them all. Could not have imagined a better way to start our meal.

    We chose a number of different dishes and were treated to a few more surprises throughout the service. This was really our first time enjoying wine pairings with dishes of this calibre and I can confidently say now, “We get it.” Absolutely perfect.

    We just couldn’t stop smiling throughout the entire evening.

    We researched several restaurants in Vancouver before choosing Published. This was a big deal for us because it’s something we don’t have the opportunity to experience at home. It really felt like everyone at the restaurant understood the excitement we were feeling and it was reflected back at us all night.

    Thank you so much to the team at Published for making our first time there (and our first time at a Michelin-star restaurant) so unforgettable.

    This was our third time dining at Published on Main since they were awarded a Michelin star. While our previous two experiences were pleasant, this visit felt noticeably disappointing and, unfortunately, not reflective of Michelin-star standards.

    The service was lackluster. We waited approximately twenty minutes past our reservation time, and throughout the meal our table was never wiped, nor were our small plates or cutlery refreshed. While these may seem like minor details, they are the types of touches that typically distinguish restaurants of this calibre.
    The food itself felt imbalanced. The salad dressing was overpoweringly acidic and sour, overwhelming the dish rather than complementing it. The pork ribs were coated in a very rich sauce, but the plate lacked contrast or elements to balance that richness. When we politely shared our feedback with a staff member, the response felt dismissive, with little acknowledgment or engagement.

    Overall, this experience was disappointing. Given our previous positive visits, we hope this was simply an off night. However, consistency is key at this level, and we left feeling that this meal did not live up to the expectations that come with a Michelin star.

    The cuisine here is truly phenomenal. I was especially impressed by the foie gras, which showcased a thoughtful balance of flavors and textures—rich yet nuanced, indulgent yet carefully composed. The chicken was equally astonishing. Although the wait exceeded 30 minutes, it proved worthwhile. The way the chicken was wrapped and prepared created beautiful layers of flavor, and the meat itself was exceptionally tender and succulent.

    That said, the sauces across several dishes leaned slightly too salty. We ended up ordering bread to soak them up, which felt like something that could have been offered complimentary to better complete the experience.

    Service was adequate but did not rise to Michelin-level polish. While generally attentive, one server lacked warmth, even neglecting a simple smile while clearing our plates. On a brighter note, the cocktails were surprisingly excellent—well-balanced and thoughtfully crafted.

    Overall, the food alone makes this restaurant worth revisiting. I look forward to returning and hope the service will match the high standard set by the kitchen next time.

    We have put off visiting the restaurant for almost 3 years since moving back to Vancouver after an absence of 10 years so we decided it would be time to pay a visit for our anniversary a week before Christmas.

    Service was exceptional. Both the maître d’ and our server were friendly and helpful.

    We opted to order from the regular and seasonal à la carte menus for dinner:

    – Brezeln – The pretzel buns were soft and warm and we could not resist putting a big glob of the honey cultured butter on every bite.

    – Octopus – The tentacles were tender and springy at the same time. The slight heat from the sauce was perfect in cutting through the richness of the meat.

    – Chicken fried maitake – The coating was very flavourful but we found the the seasoning a bit too heavy.

    – Scallops – They were fresh and sinfully delicious with the sauce.

    – Sunchoke Dumplings – A dish with simple ingredients but it was easily the most flavour rich and balanced dish of the evening.

    – Hunters Chicken – I like that both dark and white meats were served on the dish. Although I generally stay away from white poultry meat but all the pieces were tender and juicy. The seasoning was a bit on the saltier side for us though.

    – Hay – The custard dish was interesting and we were told it’s been the most popular dessert offering since the restaurant doors opened. It reminds me of a deconstructed tres leches cake from a restaurant on the North Shore years agar when I was hoping for a good piece of cake.

    Birthday dinner with family. Came highly recommended and did not disappoint, from the very beginning to the end, it was really on point. The room was understated but very nice, service was amazing and the food was next level. We loved Bar Susu and were sad to see it close but we learned that Published was affiliated so very happy we get to have the KFC fried matsutake mushroom. Everything was delicious but highlights were the gnocchi, strip loin and scallop. The staff were very attentive and even gave my wife a nice birthday parting gift.
